Job Description

To maintain responsibility for all procurement. Responsible for stock control for the Bar, Kitchen and Housekeeping. Monitor and control sales, expenses and profit goals as outlined in the departments' operating plans and budgets. Promote the company's goals relating to guest service, team work, reporting requirements and financial performance for 3 individual lodges and a separate pool outlet. The primary focus of this position is stock control, yet Guest Service will form part of the Lodge Controller's duties.

Key Focus Areas:

  • Financial and Stock Control
  • Monitor budgets and records, review financial transactions
  • Ensure that COS targets are met
  • Manage incentives and organize pay out accordingly
  • Manage all procurement of equipment and orders of stock items, sourcing the best price
  • Maintain stock and inventory records.
  • Ensure allocation of all stock items to the correct inventory accounts
  • Check high value stock items on a rotational basis.
  • Arrange for equipment maintenance, servicing and repairs
  • Run mid-month stock takes and manage the end of month stock takes
  • Compile financial reports as required
  • Beverage (in addition to above)
  • Monitor and anticipate consumption to ensure correct purchases
  • Schedule and receive deliveries
  • Manage stocks to ensure accurate issues, transfers and depletion
  • Ensure accurate pricing and effective management of the POS
  • Guest Service
  • Perform hosting and Manager on Duty shifts as required

Skills/Requirements:
At least 2 years' experience in a similar position; Strong financial and control background with knowledge of hospitality operations; Knowledge of overall hospitality operations; MS Office Suite. Exceptional numerical and analytical skills Highly organized individual with outstanding attention to detail. Good hosting and guest interaction skills. Excellent team management skills, team player.

Qualifications

  • Grade 12 (essential). Degree or Diploma in Hospitality Management (advantageous). Valid code 08 driver's license.
